Customer luves potatoes so I cut these with mandelin, slathered them with duck fat, and baked at 375 degrees for an hour+. Customer luvs beef so got this 3.5 lb. marinated —in who knows what— tri-tip at fav nearby grocery that employs some 6 to 8 butchers a shift to serve everyone's every needs. Added button mushrooms for good measure. The diminutive orange guys are honey nut squash, which I've looked for high and low and finally scored some at a farmer's market couple weeks ago. Don't know if the customer's kids will like them even though they are sweeter and much smaller than other squash and look like baby butternut squash. I took no chances so I piled on brown sugar, drizzled with maple syrup, and plopped a dollop of butter on each. That should make them think they're eating candy . . . .
